Great Grandma Ethel’s Pumpkin Pie Recipe

 My great grandma was the BEST cook.

Every holiday at our family gatherings, our countertops are FULL of food. I’m talking all the works; turkey, ham, potatoes, mac and cheese, green beans, sweet potatoes, rolls, and about 3 desserts on average, and it’s all homemade. When my great grandma (Grandaddy’s mom) was alive and able to cook, she made sure that was the case at every family meal. When grandma used to cook for us, I was too young to recognize and appreciate it. When I finally got to the age where I wanted to learn to cook like her, it was too late. My grandma died at 93 years old when I was 16. I miss her so much, and I would love to have just one more chance to be in the kitchen with her during the holidays to watch and help her do what she loved.

Every single year, without fail, my grandma would make me one of her famous pumpkin pies for my birthday. Even when she was sick or tired, she always made sure I had a pumpkin pie for my birthday because she knew it was my favorite. I looked forward to that every single birthday. When she went into the nursing home about 3 and a half years ago, I eventually had to let go of those pumpkin pies I would get every year. Now I only get them at Christmas and thanksgiving (made by my Grandaddy or aunt), and they are still delicious. But not being able to get one from grandma every year hurts my heart!

I came across a box of old index cards FULL of recipes when we were cleaning out my Grandaddy’s house. At first, I thought it was just something my Granny had collected as a gift from one of her church members (she doesn’t cook much), but when I looked at a recipe I recognized my grandmas handwriting. I immediately stopped what I was doing, sat down, and looked through every single one of those index cards. It was like grandma was saying hi to me through those recipes! In that box, I found her pumpkin pie recipes and told myself this is the year I would make one of her pies.

The recipe makes two 9″ pies, and it’s so easy to make! All I did was mix up all the ingredients, stuck them in frozen pie crusts and baked them for 40 minutes.  Of course you could always make your own pie crust and I’m sure it would make it 10 times better. I’d like to try that some day!

Serves: 16-20 slices
Ingredients
  • 2 (9 inch) frozen or refrigerated pie crusts
  • 1 cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 2 eggs
  • 1 tablespoon flour
  • ½ tsp salt
  • 15 oz can pure pumpkin (not the filling)
  • 1 small box of instant vanilla pudding mix
  • 1 tall can evaporated milk or 1⅔ cup
Instructions
  1. Preheat oven to 375 degrees. Mix all above ingredients. Spread in pie crusts. Bake for 40-45 minutes.

That was always a tradition in both of our families, so we picked right up where our parents left off! Disney Cruise Annivesary Part 3 of 3: Falmouth Jamaica and Castaway Cay

Hey y’all! I am so excited to share with you today my most favorite part of our anniversary trip! Visiting Falmouth Jamaica and Castaway Cay!

Let me start with Jamaica. This was one of my favorite ports for a number of reasons. Number one, Jamaica is breathtakingly beautiful! I have never been to a place where I could be on a beach looking at the mountains beside me. We went to Falmouth last year on our honeymoon cruise and it was my absolute favorite! Of course, that might have had something to do with the fact that we swam with dolphins. 🙂 This time, we went to the gorgeous Good Hope Great House, and learned a lot about Jamaican history. Reason number two, we were there on my birthday this year! You can’t beat a view like this on your birthday!

Castaway Cay was definitely another one of my favorites! It almost beat Jamaica on the beautiful scale. I would say they tied! 😉 Here, we got to go on jet skis and ride around this gorgeous island. The guides took us to an uninhabited part of the island where we got to see its natural beauty. It was definitely something I will never forget!

But first let me take you to the start of our day in Jamaica!

After getting off the ship, we boarded a bus that took us right to the Good Hope Estate. First they took us to an old sugar wheel on the property that the slaves used to use, that crushed the sugar into a syrup-like texture. It’s actually still working today! The actual sugar wheel is around the corner, but I was too busy listening to take any pictures 🙁

After that, we finally arrived at the house! I was honestly stunned by how beautiful it was!

And not only was the house beautiful, but the view was too! I honestly stood in awe, just thinking about the fact that God created this! This was definitely something only He could do!

Quite honestly, these pictures don’t even do this view justice. I could have sat there for hours just looking out over these mountains!

When we pulled up to the house, our tour guide told us she had a treat for us.

A Jamaican orange! It was huge! She had stopped at a factory where they had them freshly picked to send overseas. They were delicious! Not too sweet, but very juicy.

As you can imagine, the inside of the house was as beautiful as the outside. It was actually very modernized, and our guide said that it had been used as a bed and breakfast before. It is privately owned today, but was previously owned by John Tharpe, who at that time had the most slaves and land in Jamaica.

Our guide told us that this painting is original, and that it shows how the land around us looked back when John Tharpe owned the land. And if you are wondering about the furniture in the home, our guide told us that 90% (I think) is original to the home. It was all beautiful! I would have loved to stay in that house!

All of this just looks like a dream. I wish I could go back!

Fun fact: You know the snake on The Jungle Book that tried to kill Mogley by wrapping itself around him and suffocating him? Our guide told us that snakes like that inhabit the mountains we were looking at. I can’t remember their species name, maybe some kind of Python?

And this building was a slave quarter!

Also, our guide told us that John Tharpe was VERY good to his slaves. He valued them, and made sure they felt appreciated and were well taken care of. He sounded like a good man!

Soon, it was time to leave this beautiful house and go get some lunch. As much as I loved the house, I was ready for some authentic Jamaican jerk chicken!

My lunch date was pretty handsome! 😉

We got jerk chicken, mixed greens, and some kind of fried cornbread, but honestly it tasted like fried biscuit dough! Either way, it was delicious! We also got homemade fruit punch.

Sadly, after lunch we had to head back to the boat. Once we boarded, it was time to get ready for my birthday dinner at Palo! Yay!

I HIGHLY recommend Palo to any couple wanting a nice, elegant, and delicious meal just the two of you! The atmosphere is so romantic, and obviously you can’t beat the service or the food on a Disney cruise! It is not included in your cruise fare, but it is definitely worth the extra money! When we went, it was $30 a person, but you get five courses and if you are celebrating a special occasion, you usually get an extra dessert!

To start out with, you get an antipasti plate that includes prosciutto, olives, balsamic vinegar, red peppers, etc. You also get a bread basket filled with soft and hard breads. Next, you get to pick your appetizer. I got the potato gnocchi and Steven got fried calamari. The gnocchi we both liked, but I wasn’t feeling the calamari! Yuck.

Next course was a pallette cleanser! It was just lemon sorbet with a blueberry on top. So good!

Next was the the main course! The size of the dishes were crazy. SO much food! Steven got rack of lamb and I got a lemon chicken. A WHOLE lemon chicken! The waitress came out to show me how big it was, and I wish I would have gotten a picture. It was huge. She cut some off for me to have on the plate, but I could always ask for more.

Now for the best part, dessert! I ordered a chocolate soufflé with chocolate and vanilla sauce and gelato, and Steven ordered tiramisu. Then, we got an extra dessert because it was our anniversary and my birthday! Another soufflé! I could have probably eaten about five of those soufflés. That was honestly the best part of my meal!

Then our sweet waitress Jenny brought us these plates with a message written in chocolate! So cute! I wish I could have taken them home!

We had so much fun!

And as if the night wasn’t already amazing, Steven had hidden a note under his pillow for our stateroom host asking him to decorate the room for my birthday. I walked in the room to this!

My hubby is definitely the sweetest most thoughtful man I have ever met! I love being married to him more than anything in this world!

After this exciting and fun day, we headed to bed getting rested up for our last day at sea. After our last sea day, we arrived at Disney’s beautiful private island, Castaway Cay!

This was such a beautiful day to explore the island. The sun was shining and their wasn’t even a chance for rain. For today’s adventure, we were headed to get on some jet skis and ride around the island!

We went exploring a little first because we had a lot of time to kill before our excursion began. I just had to stick my feet in that crystal clear water!

We also saw this as an opportunity for pictures 🙂 This was the best we could get! He’s too tall 🙂

We relaxed on the hammocks for a bit, then it was time for jet skis!

We rode around this beautiful island over coral reefs and a bunch of fish. I wish I could have had my camera out more, but I was afraid I was going to drop it in the ocean! The water was so clear, we could pretty much see everything under us. It was breathtaking! The guides took us to another part of the island that is uninhabited, and we stopped for a little to rest and explore. One person found a starfish, so the guide took it out of the water and let us touch it. It was so pretty!

I could have stayed on that island all day. I have never been on a prettier beach!

After that we rode around a little more, then it was time for lunch. There was no need to go back on the ship because Disney had brought the buffet to us! 😉 we ate at Cookies BBQ and it was one of the best lunches we have had all week!

After lunch, we took the whole day just to relax and tan on the adult only beach, Serenity Bay! I tried a virgin strawberry daiquiri and a virgin pina colada and loved both of them! In fact, I wish I had one of each right now 😉

I think we totally regretted staying too long because we looked like tomatoes when we got done! We were burnt from head to toe. On second thought, I regret nothing because I wish I was there today to do it all over again!

This cruise was unforgettable! It was magical and fun and exciting and I would LOVE to go and do it all over again! I just want to say that I am so blessed to be married to my sweet husband. He works so hard on a daily basis to give us the life we want and I couldn’t be more thankful to him. He truly is a man of God who puts Jesus first in everything he does. I pray every single day that I am the wife he deserves and I thank God every single day for allowing me to be his wife. I truly don’t deserve him or his love! Our first year of marriage has been truly wonderful!

Disney Cruise Anniversary Part 2 of 3: Cozumel and Grand Cayman

Disney Cruise Anniversary Part 1 of 3: Port Day and Day at Sea

Sorry I have been MIA for the last couple of weeks, but I have so much to tell you about these two crazy busy, exciting, and super magical weeks that I have had!

So, as I have probably made known once or twice, my hubby and I are serious Disney fans! We even had a super sweet Disney themed wedding (which I am in the process of making a post about!). We just went on our second Disney cruise last week for our first anniversary, and we had such an amazing and romantic time! We always expect amazing things with anything Disney, but this cruise was just the best we have been on so far. We relaxed, explored, then relaxed some more and made the most of every second.

DIY Beef Flavored Dog Donuts

My fur baby LOVES to eat anything he can get a hold of!

So when I saw these donuts you can make for dogs, I made them for him as soon as I could!! We normally feed him some of those burger flavored treats that you get at Walmart, and he eats them up and usually begs for more! But I knew that giving him those were probably not the healthiest things for him, and with all of those preservatives in them, it will eventually make him sick. I love that baby so much, and I want to keep him healthy and keep him with me as long as possible!

So, on the search for a better treat for my baby, I started scrolling on Pinterest (where else?!). I found these super cute treats on Irresistable Pets.  I just had to try them out! Bentley loved them because they were delicious, and I loved them because they were good for him.

I put the link to the website I got this recipe from above, but I wanted to put my own twist on it, which I will put here. When I tasted the donuts (I just had to :D) the only thing I would change in the original recipe is to add more beef broth. You would have to add a little more flour if you did that to get the dough less sticky, but I think it would give it a better flavor. Also, the original recipe said to mix nonfat greek yogurt and honey to top the donut. I didn’t have either, so I just went with peanut butter and Bentley loved it!

If you are wondering about my poor baby’s leg, yes that is a cast. He jumped right out of my mom’s arms as she was letting him down and fractured 3 or 4 bones. So, he has a splint on his leg for 4-6 weeks! He’s not liking it too much, but is adapting well. He scared us to death, but I’m glad my poor baby is okay!

Your dog is sure to love these yummy treats! They are good for your dog and easy to make. Recipe from www.irresistablepets.com.

Ingredients
  • 1 egg
  • 2 cups whole wheat flour (I used all purpose because it was all I had on hand, Google says it is safe for dogs, just not as healthy as whole wheat)
  • ¾ cup (or more) of beef broth or chicken broth
  • 3 tablespoons old fashioned oats
Instructions
  1. Preheat oven to 400 degrees. Mix all ingredients together until a dough forms. Roll out dough on a floured surface and cut out the circles (I used the rim of a wine glass). Place each donut on a baking sheet sprayed with nonstick spray. Bake for 15 minutes. Top with peanut butter, nonfat plain greek yogurt, or honey.

Our Trip to Asheville, NC

The mountains are such a beautiful place, especially in the fall. When the air gets crisp and the leaves turn bright, there is no better time to take a trip through the winding roads and see the spectacular views.

Steven and I had never been to downtown Asheville, even though we had been to the cities around it. We wanted a little romantic getaway in the country and that’s definitely what we got! Honestly, we were just looking for a day to get away from the stresses of work and everyday life and just enjoy each other and truly focus on each other.

My husband and I went on our first 7 night Caribbean Disney cruise last year for our honeymoon, and it was one of the BEST vacations I have ever had! And not just because it was my honeymoon 🙂 My husband and I are total Disney freaks (we even met in Disney World), and are annual pass holders to Disney World in Orlando. We go every single chance we get! We had never cruised before in our lives, but we knew that when we did, we definitely wanted to go on a Disney cruise!
